Recipe Exchange

Lysa Terkeurst from the Proverbs 31 Ministry has challenged us to bless each other with our favorite recipes. This is one of my families favorite meals. It sounds simple but it is oh so tasty!!

Italian Meatloaf Surprise
1lb ground turkey
1 lb ground beef
1 cup ketchup
2 Tbsp spicy mustard
2 egg whites
2 tsp garlic powder
1 tsp salt
Worcestershire sauce (to taste)
Soy sauce (to taste)
6 oz mozzarella shredded cheese
Combine all ingredients except the cheese. Press the meat mixture on greased wax paper into rectangular shape, approximately 1/2 inch thick. Top with cheese leaving a 1/2 inch border. Roll meat mixture from one end to the other-press ends and pat sides-should have a log appearance. Bake at 375 degrees for 55-60 minutes (thermometer inserted into middle should read 170 degrees). Top with ketchup and bake 10-15 minutes longer. Set for 15 minutes before serving. When cut, will resemble a jelly roll but has a pizza taste.

Oven Baked Cheesy Ranch-n-Bacon Potatoes
8 oz sour cream
1 pkg Hidden Valley Ranch (dry mix)
8-10 medium red potatoes
4 tsp butter
1/2 C real bacon bits
1 c shredded Colby jack cheese
1/2 C chopped onions (optional)
Salt and Pepper to taste

Mix sour cream and Hidden Valley Ranch dry mix together. Set aside. Quarter potatoes; place in baking dish with melted butter. Add salt and pepper. Cover and bake at 400 degrees for 35-40 minutes until potatoes are cooked. Add bacon, cheese and sour cream mixture to cooked potatoes. Bake an additional 15-20 minutes uncovered. Serve warm.

I tried to answer question by posting on my own blog- but could not.... Brie is a type of cheese-comes in a wedge. President is the brand name. You can get it in the refridgerated section at the grocery store, usually around the special cheese, around the deli area. Its my favorite kind. Very rich and creamy. A little goes a long way.

This sounds so yummy! I'll have to give it a try. I was thinking of your verse in Isaiah today...with snow covering all the dirt and mud, it reminded me of our robe of righteousness we will one day wear as we await the bridegroom. Hallelujah!
